Lacinato Kale Salad with Lemon & Ricotta Dressing
I am always looking for ways to add vegetables to my and my family’s diet. Being a dietitian, I know the importance of eating enough vegetables. So when my husband said he loved this lemon ricotta kale salad, I saved it and try to make it often!
This recipe includes lacinato kale, also known as dinosaur kale. Lacinato kale is chock full of vitamins A, K, C, and B6, it’s wonderful for eye health. Kale is also full of fiber, which can lower cholesterol levels and lead to a reduced risk of heart disease over time!
Ok, I’ll stop blabbing about the health benefits and get into the recipe!
Lacinato Kale Salad with Lemon & Ricotta Dressing
Prep: 20 minutes
Yield: 4-6 servings
Ingredients
1 bunch lacinato kale, stems and center ribs removed
1/4 cup ricotta cheese
4 tablespoons extra virgin olive oil
2-3 tablespoons lemon juice
2 tablespoons minced shallot
salt and pepper to taste
Step 1
After removing the center ribs and stems slice kale crosswise into thin slices. like the photo below
Step 2
In a small to medium-sized bowl mix lemon juice, minced shallot, salt, pepper, and olive oil together well
Step 3
Toss strips of kale with ricotta cheese and olive oil and lemon dressing until combined well. Squeeze additional lemon juice and salt and pepper to taste preferences. Enjoy!
